Paleo Chocolate Mousse

Sharing a post of random things I am loving right now that fit no cohesive theme besides that!

This dessert recipe is SUPER simple.  I make it with my kids and you can make it as pudding or mousse in under 5 minutes.   This dessert recipe is Paleo (but not Whole30 because it contains maple syrup).

To make: in a mixing bowl (or I use a tall Mason jar with a wide mouth) or blender (I use this hand blender all the time) mix these ingredients:

  • 1/2 avocado
  • 2-3 tablespoons of unsweetened cocoa (depends how rich you like your chocolate)
  • 1 can of full fat unsweetened coconut milk (use only the solid portion for mousse, use all of the contents (liquid and solid) for pudding.  Depending on the temperature of your kitchen you may need to refrigerate the can before use to really separate the solid and liquid portion if you want to make the mousse.
  • 1 teaspoon cinnamon (helps regulate blood sugar 🙂
  • 1/3 cup maple syrup (adjust to taste)

Divide into 4+ servings.  Refrigerate 2+ hours before serving.   Keep in mind this is a paleo/clean eating dessert.   I think it’s delicious but only one of my children does too :).   Let me know what you think or changes you might suggest if you try it.   You can top it with paleo whipped cream which is also super easy to make.

THIS CARDIGAN!!!   My favorite piece taking me through Winter to Spring and it happens to be on sale and in stock in the smaller size.  It sold out at Nordstrom as soon as it went on sale 🙁 but I found it here for 20% off.  It’s oversized and slouchy and pairs perfectly with a cami.   The cami I am wearing is on sale for $10 right now!!!!  It’s such a gorgeous material and color.   The back details are really pretty.  I always wear what I call nipple camo under these types of camis so I don’t offend people with my pointy nursing nipples ;).  The nipples covers are adhesive and reusable.

The hair jewelry (if you can see beyond the post partum regrowth situation) I have on in the picture above is from Headbands of Hope.   For each headband or head piece purchased they donate one to a child with cancer.  Cheers to brands that give back!!

I’ve been using hot rollers again!   I had stopped for many years, mostly just forgetting how easy they are!  This T3 set of 8 rollers is enough for my entire head of hair AND IS CURRENTLY ON SALE!    I throw my hair up in the rollers first thing when I get up and let the rollers cool while I put on makeup and cook breakfast.   The rollers leave a  loose wave in my long hair but add enough body to make it look more polished.  I hear amazing things about the T3 curling wand but right now I am using this cheapie curling wand for under $25.  I still use the heat protector glove because I am sloppy and uncoordinated (in hairstyling and in life :).
