Today I am sharing 3 quick and healthy lunch ideas that include a Thai peanut sauce that I LOVE!   I tweeked the peanut sauce recipe from Gimme Some Oven.   She has lots of good recipes on her site if you want to check them out.   Below you will see the recipe I use for the Thai peanut sauce and then sharing how to easily use that sauce for 3 quick and healthy lunch ideas.

Quick and Healthy Lunch Ideas Recipe 1: Grilled Chicken and Veggies with Thai Peanut Dipping Sauce

I cut up whatever veggies I have on hand and use leftover grilled chicken.   I generally grill chicken thighs if I am doing Thai meals that week and season the chicken with cumin, paprika, salt and pepper before grilling because I keep those spices on hand.  Feel free to use whatever you keep in your spice cabinet.

Quick and Healthy Lunch Ideas Recipe 2: Thai Chicken Salad

I thin the Thai peanut sauce with a little water to make it a dressing.   I put the dressing over pre-chopped coleslaw mix and add leftover chicken, salted cashews, and lots of fresh cilantro.

Quick and Healthy Lunch Ideas Recipe 3: Thai Chicken Summer Rolls

Again you can add whatever protein you fancy.  I do not like shrimp and don’t eat tofu but those would be good options as well.  If you haven’t used rice wrappers they’re super easy and stocked at most grocery stores.  I got mine at my local Whole Foods.   Dip the rice wrapper under the faucet water for a few seconds to saturate it.   The wrapper will absorb the water and soften.

Lay your rice wrapper on a clean surface and stuff if like you would burrito.   I often get pre-chopped veggies because it saves me time when I’m trying to prepare something healthy while occupying my kids.   Veggies like peppers, carrots, zucchini and cucumber all do well in the wrappers.   I add mint to mine because I love the flavor combination when dipped into (copious amounts of) the Thai peanut sauce.

Roll the wrappers like you would a burrito and use within a few hours.  Unfortunately these don’t keep that well overnight because the wrappers get hard.

    Thanks for sharing your lunch ideas! My lunch is boring usually chicken with salad or tuna with salad, I try and eat as healthy as possible and then I loose my willpower at dinner haha. But I can’t wait to try your recipes!
