This cookie recipe eliminates the bad ingredients with healthy substitutions. It’s vegan and Paleo (depending on your chocolate chips) friendly and my kids and husband LOVE them.
Here’s how I improved the nutrition content of these cookies:
Avocado takes the place of butter.
Banana instead of egg.
Maple Syrup in place of sugar.
Organic chocolate chips.
I first used my immersion blender to blend the banana and avocado into a creamy mixture. Then stir in the remaining ingredients (except the chocolate chips which you fold in just before baking. The mixture will be a little looser than regular cookies dough. You could chill it and the starch will absorb some of that – I was in a rush to eat some chocolate so I did not wait.
